Ingredients
  

Custard mixture

  • 1 cup milk (dairy or plant-based as preferred) Use your preferred type of milk.
  • 1/2 cup pumpkin puree (canned or homemade)
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • pinch salt

For cooking

  • Butter or oil for cooking

Toppings

  • Maple syrup To taste
  • Whipped cream To taste
  • Chopped nuts To taste

Bread

  • 4 slices bread (whole wheat or any preferred variety) Challah or brioche can also be used for richer flavor.

Preparation

  • In a bowl, whisk together the milk, pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, and a pinch of salt until smooth and well-combined.
  • Heat a non-stick skillet over medium heat and add a small pat of butter or a splash of oil, allowing it to melt and coat the pan.
  • Dip each slice of bread into the pumpkin custard mixture, ensuring both sides are well-coated but not overly soggy.

Cooking

  • Place the soaked bread slices onto the heated skillet. Cook each side for about 3-4 minutes, or until golden brown and crispy.
  • Once cooked, transfer the French toast to a plate and top it with your favorite additions like maple syrup or whipped cream.

Notes

Refrigerate any leftovers in an airtight container for up to 3 days. For long-term storage, freeze slices separated by parchment paper for up to 2 months. Reheat in a toaster oven or frying pan over low heat for best results.
