Ingredients
  

For the Base

  • 1 cup long-grain rice, rinsed
  • 4 cups vegetable broth (no pork or alcohol)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 1 tsp turmeric powder
  • 1 tsp black pepper
  • 1 tbsp olive oil

For Garnishing

  • Fresh parsley for garnish
  • Optional toppings: fried onions, lemon wedges, or a dollop of yogurt (ensure it's halal)

Preparation

  • Rinse your rice under cold water until the water runs clear to remove excess starch.
  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  • Add the minced garlic and sauté for another 1-2 minutes, until fragrant.
  • Stir in the rinsed rice and cook for about 2-3 minutes.

Cooking

  • Pour in the vegetable broth, along with turmeric and black pepper. Stir to incorporate.
  • Add the mixed vegetables and bring everything to a boil.
  • Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20 minutes or until the rice absorbs the liquid and becomes tender.
  • Turn off the heat and let the dish sit, covered, for about 5 minutes. Fluff the rice with a fork before serving.

Notes

If you’re out of vegetable broth, use chicken broth or seasoned water. Store leftover rice in an airtight container for up to 3 days in the refrigerator.
