  • 6 large large eggs
  • 1 cup milk
  • 1 cup cooked sausage, crumbled You can use turkey or chicken sausage as an alternative.
  • 1 cup shredded cheddar cheese
  • 1/2 cup onion, finely chopped Sautéed for sweetness.
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • Cooking spray or oil for greasing muffin tin

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease your muffin tin with cooking spray or a little oil.
  • In a small skillet, sauté the chopped onions over medium heat until soft and slightly caramelized, about 5 minutes. Set aside to cool.
  • In a large mixing bowl, whisk together the eggs and milk until well combined.
  • Add the salt, black pepper, and garlic powder to the egg mixture and whisk to incorporate.
  • Stir in the cooked sausage, sautéed onions, and shredded cheddar cheese until evenly distributed.
  • Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.

Baking

  • Bake in the oven for 18-20 minutes or until the muffins are golden brown and set in the center.
  • Allow the muffins to cool in the pan for about 5 minutes before gently removing them.
  • Serve warm.

Notes

Customize by swapping ingredients for veggies or different meats. For best results, avoid overmixing and don't overfill the muffin cups.
