  • 1 head of garlic For the roasted goodness.

  • 1 cup freshly grated Parmesan cheese The star ingredient that ties everything together.

Preparation

  • Preheat your oven to 400°F (200°C) for perfectly roasted garlic.
  • Cut the top off the garlic head, drizzle with olive oil, and wrap in foil. Place it in the oven for about 30-35 minutes until soft and caramelized.
  • In a large pot of boiling salted water, cook the gnocchi according to the package instructions until they float to the top (about 2-3 minutes). Drain and set aside.
  • Once roasted, squeeze the soft garlic out of the skins into a large bowl and mash it into a paste with a fork.
  • Add the gnocchi to the bowl with the roasted garlic paste, then sprinkle in salt, pepper, and most of the Parmesan cheese. Toss carefully to coat.

Serving

  • Transfer to a serving bowl, top with remaining Parmesan, and fresh parsley if using. Enjoy this creamy, flavorful delight!

Notes

Don’t overcook the gnocchi. Experiment with different cheeses for a unique twist. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze before cooking for up to 2 months.
