Main Ingredients

  • 1 cup orzo pasta A perfect base for this dish.
  • 2 cups vegetable broth This adds richer flavors.
  • 1 cup mushrooms Sliced (cremini or button works best).
  • 1 medium onion Finely chopped.
  • 3 cloves garlic Minced (the more, the better).
  • 1/2 cup heavy cream For that creamy texture.
  • 1/2 cup grated Parmesan cheese Optional but adds wonderful flavor.
  • to taste salt and pepper For seasoning.

Garnish

  • 1 bunch fresh parsley Chopped, for serving.

Instructions
 

Sauté the Vegetables

  • In a large skillet, heat a drizzle of olive oil over medium heat.
  • Add the chopped onion and sauté for 3-5 minutes until translucent.
  • Stir in the minced garlic and mushrooms, cooking for another 5 minutes until the mushrooms soften.

Cook the Orzo

  • Pour in the vegetable broth and bring to a boil.
  • Once boiling, stir in the orzo, lower the heat to a simmer, and cover.
  • Cook for about 10-12 minutes or until the orzo is tender, stirring occasionally.

Add Cream and Cheese

  • Once the orzo is cooked, reduce the heat further and stir in the heavy cream and Parmesan (if using).
  • Season with salt and pepper to taste and let simmer for a couple of minutes to meld the flavors.

Serve

  • Garnish with fresh parsley and a sprinkle of extra cheese if desired.
  • Enjoy your creation while warm!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. For longer storage, freeze in portions for up to a month. Reheat gently with a splash of broth or water.
