Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Flavor Ingredients

  • 1/2 cup shredded cheese cheddar, gouda, or your choice
  • 1/4 cup fresh herbs such as rosemary, thyme, or parsley, finely chopped

Wet Ingredients

  • 1/4 cup cold butter cubed
  • 3/4 cup buttermilk or milk with a splash of vinegar

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, whisk together the flour, baking powder, salt, and black pepper until evenly combined.
  • Stir in the shredded cheese and chopped herbs into the dry mixture until well distributed.
  • Add the cold, cubed butter to the bowl and cut it into the flour mixture until it resembles coarse crumbs.
  • Make a well in the center and pour in the buttermilk. Mix gently until just combined; lumps are okay!
  • Turn the dough out onto a floured surface and pat it into a 1-inch thick circle. Cut into wedges or round shapes.

Baking

  • Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown on top.
  • Allow the scones to cool slightly on a wire rack before serving.

Notes

Enjoy with butter, cream cheese, avocado, or honey. Store leftovers in an airtight container or freeze for longer storage.
