Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and black pepper.
  • Cut the cold butter into small cubes and add to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
  • Gently fold in the cheese and herbs, making sure they're evenly distributed.
  • Pour in the milk and stir with a fork until just combined. Be careful not to overmix; a little clumpiness is fine.
  • Turn the dough onto a floured surface and gently knead it a couple of times to bring it together. Pat it into a circle about 1 inch thick.
  • Using a sharp knife, cut the circle into 8 wedges and place them on the prepared baking sheet.

Baking

  • Bake in the preheated oven for 15-20 minutes or until golden brown and baked through.
  • Allow the scones to cool slightly before enjoying them warm.

Notes

Serve with hearty soups or a fresh garden salad. They pair beautifully with herb butter or creamy dips. Store leftovers in an airtight container at room temperature for up to 2 days, or freeze for a month.
