For the Lemon Orzo

  • 1 cup orzo pasta Can substitute with other small pasta.
  • 2 cups chicken broth Use low-sodium for a healthier option.
  • 1 large Juice and zest of 1 lemon Fresh lemon is best.
  • 1 tbsp olive oil For flavor and richness.
  • to taste Fresh parsley for garnish Optional but adds color and freshness.

Instructions
 

Preparation of Meatballs

  • In a large bowl, combine ground chicken, breadcrumbs, feta cheese, egg, minced garlic, parsley, oregano, salt, and pepper. Mix until well incorporated.
  • Roll the mixture into small meatballs, about 1 inch in diameter.

Cooking the Meatballs

  • In a large skillet over medium heat, heat a splash of olive oil.
  • Add the meatballs and cook for about 6-8 minutes, turning occasionally until browned and cooked through. Remove from heat and set aside.

Cooking the Lemon Orzo

  • In a saucepan, bring the chicken broth to a boil.
  • Add the orzo and cook according to package instructions, typically about 8-10 minutes.
  • Once cooked, drain any excess broth and stir in lemon juice, zest, and olive oil. Season with salt and pepper to taste.

Combining and Serving

  • Gently toss the cooked meatballs with the lemon orzo in the pan.
  • Serve hot, garnished with fresh parsley!

Notes

Leftovers can be stored in an airtight container in the fridge for 3-4 days. Reheat with a splash of chicken broth to maintain moisture. These meatballs are also great in wraps or salads.
