Preparation

  • Start by slicing the onions and mincing the garlic. Season the beef with salt and pepper.

Cooking

  • In a large pot or Dutch oven, heat the olive oil over medium-high heat. Sear the beef roast for 4-5 minutes on each side until nicely browned. Remove the beef and set it aside.
  • In the same pot, add the sliced onions. Cook, stirring frequently, for about 10-12 minutes until they are caramelized and golden brown. Add the minced garlic and cook for an additional minute.
  • Return the beef roast to the pot, adding in the beef broth, thyme, and bay leaves.
  • Bring the mixture to a boil, then reduce to a simmer. Cover the pot and let it cook for about 4-5 hours, or until the beef is tender and easily shredded with a fork.
  • Remove the thyme and bay leaves before serving. Invite your guests to enjoy a warm helping of this delightful pot roast!

Notes
