Ingredients
  

For the Cabbage Rolls

  • 1 large head large head of green cabbage Make sure to wash thoroughly.
  • 1 cup uncooked rice
  • 1 lb ground chicken (or beef substitute)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 can (15 oz) diced tomatoes
  • 2 cups vegetable or chicken broth
  • Fresh herbs like parsley or cilantro for garnish

Preparation

  • Bring a large pot of water to a boil. Carefully remove the core of the cabbage and place the entire head in the boiling water. Let it cook for about 5 minutes until the outer leaves are tender. Remove the leaves and set them aside to cool.
  • In a large bowl, combine the ground chicken (or beef substitute), uncooked rice, chopped onion, minced garlic, cumin, black pepper, and salt. Mix until everything is well combined.
  • Take one cabbage leaf, place about 2 tablespoons of the filling at the base, and fold the sides over the filling. Roll it up tightly, making sure to tuck in the sides. Repeat with the remaining leaves and filling.
  • In a large pot or baking dish, pour in the diced tomatoes and broth to create a flavorful sauce for the rolls. Place the cabbage rolls seam side down in the pot or dish.
  • Cover the pot or dish with a lid or aluminum foil. Bake in a preheated oven at 350°F (175°C) for about 45-60 minutes, or until the rolls are cooked through and the rice is tender.
  • Garnish with fresh herbs and serve hot with a side of yogurt or lemon juice.

Notes

Experiment with fillings like lean ground turkey or lentils for a vegetarian option. If you have leftovers, they can last in the refrigerator for up to 4 days, or be frozen for up to 3 months.
