Ingredients
  

Meat & Seasoning

  • 3 lbs Short Ribs, bone-in for optimal flavor
  • 2 tablespoons Olive Oil, for browning
  • to taste Salt
  • to taste Black Pepper

Vegetables

  • 2 large Carrots, diced
  • 2 stalks Celery, diced
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced

Liquids & Flavorings

  • 4 cups Beef Broth, Halal-certified
  • 2 tablespoons Tomato Paste
  • 2 sprigs Rosemary, fresh
  • 1 teaspoon Thyme, dried or fresh
  • 1 Bay Leaf, to infuse flavor

Garnish

  • Fresh Parsley, for garnish

Instructions
 

Preparation

  • Season the short ribs generously with salt and black pepper.
  • Heat olive oil in a large Dutch oven over medium-high heat.
  • Sear the short ribs on each side until browned, about 3-4 minutes per side. Remove and set aside.

Cooking

  • In the same pot, add the chopped onions, carrots, and celery. Cook for about 5 minutes, or until the veggies become soft.
  • Add minced garlic and sauté for an additional minute, just until fragrant.
  • Stir in the tomato paste, coating the vegetables. Gradually pour in the beef broth, scraping any browned bits from the bottom of the pot.
  • Return the seared short ribs to the pot. Toss in the rosemary, thyme, and bay leaf, ensuring the ribs are submerged in the liquid.
  • Bring to a gentle simmer.
  • Cover the pot with a lid and transfer it to a preheated oven at 325°F (160°C). Let it braise for about 2.5 to 3 hours, or until the beef is fork-tender.

Serving

  • Once done, carefully remove the short ribs and let them rest for a few minutes.
  • Skim off any excess fat from the sauce before serving.
  • Garnish with fresh parsley and enjoy with mashed potatoes or crusty bread to soak up all the delicious sauce!

Notes

For optimal freshness, store any leftovers in an airtight container in the refrigerator for up to 3 days. Alternatively, freeze for up to three months. To reheat, gently warm in a saucepan over low heat, adding a splash of beef broth if needed.
