  • 1 can (14.5 oz) diced tomatoes, undrained

Cooking Steps

  • In a large pot or Dutch oven, heat a drizzle of olive oil over medium heat.
  • Add the Italian sausage, breaking it apart with a wooden spoon, and cook until browned (about 5-7 minutes).
  • Toss in the diced onion and minced garlic, sautéing until the onion is translucent (around 3-4 minutes).
  • Pour in the chicken broth and bring the mixture to a gentle boil.
  • Add the refrigerated tortellini and diced tomatoes into the pot. Allow everything to come back to a simmer, cooking for about 5-7 minutes or until the tortellini is tender.
  • Slowly fold in the fresh spinach until it wilts down into the soup (should only take a minute).
  • Taste your soup and add salt and pepper according to your preferences.
  • Ladle the soup into bowls and sprinkle with Parmesan cheese if desired.

Notes
