  • 3 cups all-purpose flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon instant yeast
  • 1.5 cups water room temperature
  • 2 tablespoons fresh rosemary chopped
  • 3 cloves garlic minced

Preparation

  • In a large mixing bowl, whisk together the flour, salt, and instant yeast until well combined.
  • Add the water to the dry mixture and stir with a wooden spoon until a shaggy dough forms. Incorporate the chopped rosemary and minced garlic.
  • Cover the bowl with plastic wrap or a kitchen towel and let it sit at room temperature for 12 to 18 hours.
  • After rising, lightly flour a surface and turn the dough onto it. Shape it into a ball by folding the edges toward the center.
  • Place the dough onto a sheet of parchment paper, cover with a towel, and let it rise for another 1 to 2 hours.
  • Preheat your oven to 450°F (232°C) with a Dutch oven inside for at least 30 minutes.
  • Carefully remove the hot Dutch oven, lift the parchment with the dough, and place it into the Dutch oven, cover, and bake for 30 minutes.
  • After 30 minutes, uncover and bake for an additional 15 minutes until golden and crusty.
  • Transfer the bread to a wire rack to cool completely before slicing.

Notes

Store wrapped in a cloth or vacuum-sealed bag at room temperature for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 10-15 minutes.
