Ingredients
  

Main Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 1 medium onion, diced
  • 2 pieces bell peppers (any color), sliced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 cup chicken broth

Herbs and Spices

  • 1 tsp dried oregano
  • 1 tsp dried basil
  • to taste Salt and pepper

Optional Garnish

  • to taste Fresh basil for garnish

Instructions
 

Preparation

  • Begin by dicing the onion and slicing the bell peppers. Mince the garlic to release those beautiful flavors.
  • In the bottom of your crockpot, add the diced onions and sliced bell peppers. They will create a bed for the chicken.
  • Place the boneless chicken thighs on top of the vegetables, giving them a little sprinkle of salt and pepper.

Mixing the Sauce

  • In a mixing bowl, combine the diced tomatoes, tomato paste, chicken broth, minced garlic, oregano, and basil. Stir well to mix everything together.
  • Carefully pour the tomato mixture over the chicken in the crockpot, covering it completely.

Cooking

  • Cover the crockpot with its lid and set it on low for 6-8 hours. If you’re in a rush, you can cook it on high for 3-4 hours.

Serving

  • When the chicken is tender and easily shreds with a fork, it’s ready to serve! Optionally, garnish with fresh basil for a burst of color and flavor.

Notes

For the best taste, use fresh vegetables. Feel free to add extra vegetables like mushrooms or zucchini. Adjust spice levels by adding red pepper flakes for added heat. Store leftovers in an airtight container for up to 3 days in the refrigerator, or freeze for up to 3 months.
