  • 4 cups vegetable broth

  • 2 tablespoons olive oil

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Toss in the diced carrots and sauté for an additional 3-4 minutes until they begin to soften.
  • Add the diced potatoes to the pot, stirring to combine all the vegetables.
  • Carefully pour the vegetable broth over the veggies, ensuring they are fully submerged. Bring to a gentle boil.
  • Reduce the heat and let the soup simmer for about 20 minutes, or until the potatoes are tender.
  • Once the veggies are cooked, stir in the heavy cream (or milk) and season with salt and pepper to taste. Heat for an additional 5 minutes.
