  • 1 package stuffing mix

  • 1 cup frozen mixed vegetables (optional) Feel free to mix in leftover vegetables like carrots or peas.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the shredded rotisserie chicken, stuffing mix, chicken broth, and mixed vegetables.
  • Add garlic powder, onion powder, salt, and pepper, and mix until well combined.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Top with shredded cheese if desired.

Baking

  • Bake in the preheated oven for 25-30 minutes, or until heated through and the top is golden brown.

Serving

  • Let it cool slightly before serving.
  • Serve warm, and pair with a simple green salad or steamed vegetables.
  • For a southern twist, consider adding some cranberry sauce on the side.

Notes

Store any leftovers in an airtight container in the refrigerator for 3-4 days. For longer storage, freeze in a freezer-safe container for up to 2-3 months. You can also prepare the casserole ahead of time and bake from the fridge, adding extra time as necessary.
