Preparation

  • In a mixing bowl, combine the diced tomatoes, onion, jalapeño, and cilantro.
  • Squeeze the lime juice over the mixture and add salt to taste.
  • Stir well to combine and let it sit for about 10 minutes before serving to allow the flavors to meld.

Notes

Letting the mixture sit for about 10 minutes is important, as it helps the flavors blend together beautifully. Rooster's Beak can also be served on top of scrambled eggs for a flavorful breakfast twist. Store in an airtight container in the refrigerator for 2-3 days.
