Ingredients

Main Ingredients

  • 1 cup roasted red peppers (jarred or homemade)
  • 1 cup cottage cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, minced (optional) For added flavor
  • Salt and pepper to taste
  • Fresh herbs for garnish (such as parsley or cilantro)

Instructions

Preparation

  • Gather your ingredients: Place the roasted red peppers, cottage cheese, olive oil, and minced garlic in a blender or food processor.
  • Blend: Puree the mixture until it reaches a smooth and creamy consistency. You may stop to scrape down the sides if necessary.
  • Season: Taste and add salt and pepper to suit your preference, blending again for a few seconds to mix.
  • Serve: Transfer the dip to a serving bowl and garnish with fresh herbs, if desired. Enjoy with crunchy vegetables, pita chips, or use it as a spread on sandwiches!

Notes

For a thinner dip, add a splash of water or more olive oil during blending. For a sweeter flavor, use roasted garlic instead of fresh. Leftovers can be stored in the refrigerator for up to 3 days; stir before serving again.
