  • 1 pound fresh green beans, trimmed
  • 1/2 cup slivered almonds
  • 3 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon garlic powder optional

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and trim the ends of your green beans. Pat them dry with a kitchen towel.
  • In a large bowl, combine the green beans, olive oil, salt, pepper, and garlic powder (if using). Toss until well-coated.
  • Sprinkle the slivered almonds over the green bean mixture and toss again to evenly distribute.

Cooking

  • Spread the green beans and almonds evenly on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 20-25 minutes, stirring halfway through, until the green beans are tender and the almonds are golden brown.

Serving

  • Remove from oven and let cool slightly before serving. Enjoy!

Notes

Substitute almonds with sunflower or pumpkin seeds for a nut-free version. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for 10 minutes for best texture.
