  • 1 pound baby carrots or whole carrots sliced into sticks
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • Fresh parsley chopped (optional, for garnish)

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • If using whole carrots, peel and slice them into even sticks.
  • In a large bowl, combine the carrots, olive oil, minced garlic, salt, and black pepper, tossing until well coated.

Cooking

  • Spread the coated carrots onto a baking sheet in a single layer. Roast in the oven for about 20 minutes, tossing halfway through.
  • After 20 minutes, remove the baking sheet from the oven. Sprinkle the roasted carrots with grated Parmesan cheese and return to the oven for another 5 minutes.

Serving

  • Remove the carrots from the oven and garnish with fresh parsley if desired. Serve immediately.

Notes

For best results, choose fresh, firm carrots. You can adjust cooking times based on carrot size and oven performance. Refrigerate leftovers for up to 4 days and reheat in the oven or a pan.
