  • 1 cup unsalted butter, softened Ensure it's at room temperature.
  • 2 cups sugar
  • 4 large eggs At room temperature.
  • 3 cups all-purpose flour Sifted.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cardamom Use freshly ground for best flavor.
  • 1/2 cup brewed coffee, cooled
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  • Cream together the butter and sugar in a large mixing bowl using an electric mixer until light and fluffy, about 5-7 minutes.
  • Add the eggs, one at a time, beating well after each addition.
  • In a separate bowl, sift together the flour, baking powder, salt, and ground cardamom.
  • Gradually add the dry ingredients to the butter-sugar-egg mixture, alternating with the cooled brewed coffee, starting and finishing with the flour mixture. Mix until just combined.
  • Stir in the vanilla extract gently.

Baking

  • Pour the batter into the prepared loaf pan, smoothing out the top.
  • Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Slice and serve warm or at room temperature.

Notes

For best flavor, use fresh ground cardamom and ensure all ingredients are at room temperature. Don't overmix to avoid a dense cake. Store leftovers wrapped tightly at room temperature for up to 3 days or freeze for longer storage.
