  • 1 cup mayonnaise
  • 1 cup diced cooked chicken (or chickpeas for a vegetarian option) Make sure the chicken is fully cooked.
  • 1/2 cup diced celery
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley) for added flavor

For assembly

  • 2 sleeves Ritz crackers

Preparation

  • In a mixing bowl, combine the mayonnaise, diced cooked chicken (or chickpeas), diced celery, shredded cheese, lemon juice, salt, and pepper. Mix well until all ingredients are incorporated.
  • Lay out a Ritz cracker on a clean surface. Spoon a generous amount of the filling onto the cracker, then top with another cracker to create a sandwich.
  • If you have time, refrigerate the sandwiches for about 15 minutes to allow flavors to meld and the filling to firm up.
  • Place neatly on a platter and serve chilled or at room temperature.

Notes

Feel free to get creative with your fillings! You can use tuna, ham, or make a vegetarian version with roasted vegetables. These sandwiches are best enjoyed fresh, but they can last up to three days in an airtight container in the refrigerator. Reheat any cooked ingredients before assembling to maintain the cracker's crunch.
