Filling

  • 4 cups sliced peaches (fresh or canned) Use ripe peaches for best sweetness.
  • 1/2 cup sugar For blending with peaches.

Batter

  • 1 cup sugar For batter mixture.
  • 1 cup self-rising flour Can substitute with gluten-free flour blend.
  • 1 cup milk
  • 1/2 cup butter (melted) Melted for batter.
  • 1 teaspoon vanilla extract
  • Cinnamon (optional) For topping or mixing in.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix the sliced peaches with 1/2 cup of sugar and set aside.
  • In another bowl, combine the remaining sugar, flour, and milk until smooth and creamy.
  • Pour the melted butter into a baking dish. Gently pour the batter over the melted butter.
  • Spoon the peach mixture over the batter without stirring.

Baking

  • Place the baking dish in the oven and bake for 45-50 minutes, or until the top is golden brown and bubbly.
  • Allow it to cool slightly before serving.

Notes

Serve warm, topped with a scoop of vanilla ice cream, whipped cream, or a sprinkle of cinnamon. Store leftovers covered in the refrigerator for 3-4 days, or freeze for up to 2 months.
