  • 2 cups cherry tomatoes, halved
  • 1 medium red onion, thinly sliced

  • 1 tablespoon apple cider vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: fresh herbs (like parsley or basil) for garnish

Preparation

  • Wash the cucumbers and tomatoes thoroughly. Slice the cucumbers into thin rounds, halve the cherry tomatoes, and cut the onion into thin slices. Place all in a large mixing bowl.
  • In a small bowl, whisk together the olive oil and apple cider vinegar. Season with salt and pepper to taste.
  • Pour the dressing over the veggies in the mixing bowl. Gently toss everything together, ensuring each piece is coated in that delicious dressing!
  • If you're using fresh herbs, sprinkle them on top for added color and flavor.
  • For the best flavor, let the salad chill in the fridge for about 10 minutes before serving. This will give the flavors time to mingle!

Notes

Can add other vegetables like bell peppers or avocado for variation. Consider making ahead but keep dressing separate until serving to ensure crispness. Store leftovers in an airtight container for up to 2 days.
