Ingredients

Coleslaw Base

  • 4 cups green cabbage, finely shredded
  • 1 cup carrots, grated
  • 1 cup apples, cored and diced (preferably tart varieties like Granny Smith)
  • 1 cup dried cranberries

Dressing

  • 1 cup mayonnaise (can use yogurt as a healthier alternative)
  • 2 tablespoons apple vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

Preparation

  • Start by finely shredding your green cabbage and grating your carrots. Place these in a large mixing bowl.
  • Core and dice the apples into small pieces. Toss them into the bowl with the cabbage and carrots, followed by the dried cranberries.

Dressing Preparation

  • In a separate smaller bowl, combine the mayonnaise, apple vinegar, and honey. Whisk together until smooth.

Combine & Season

  • Pour the dressing over the cabbage, apple, carrot, and cranberry mixture. Toss everything together until well-coated.
  • Sprinkle with salt and pepper to taste. Toss again lightly to combine.

Chill

  • For the best flavor, refrigerate the coleslaw for about 30 minutes before serving. This allows the flavors to meld beautifully!

Notes

Vegetable variations like red cabbage or adding nuts can enhance this dish. For a lighter version, substitute mayonnaise with Greek yogurt or vinaigrette. Adjust sweetness according to taste.
