  • 1 cup fresh or frozen raspberries (thawed if frozen)
  • 1 cup sweetened shredded coconut
  • 1/2 cup sweetened condensed milk

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease an 8×8 inch baking dish with non-stick spray or line it with parchment paper.
  • In a mixing bowl, combine the flour, melted butter, brown sugar, baking powder, and salt. Mix until fully combined, resembling a crumbly dough.
  • Transfer the dough mixture into your prepared baking dish, pressing it evenly into the bottom.
  • Gently scatter the raspberries over the base layer, ensuring an even distribution.
  • Sprinkle the shredded coconut evenly over the raspberries.
  • Drizzle the sweetened condensed milk over the entire top.
  • Bake for 25-30 minutes until the top is golden brown and the edges begin to crisp.
  • Remove from the oven and allow to cool completely before cutting into squares.
  • Serve as a delightful treat with tea or coffee or enjoy as a sweet snack.

Notes

Store in an airtight container for up to a week or refrigerate/freezer for longer storage. Reheat in the microwave or oven for a few seconds for restored chewiness.
