  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1 cup sugar
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract

Mix-Ins

  • 1 cup grated carrots
  • 1 cup chopped apples (peeled)
  • ½ cup crushed pineapple (drained)
  • ½ cup raisins or nuts (optional)

Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  • In another bowl, whisk the eggs, sugar, vegetable oil, and vanilla extract until well blended.
  • Pour the wet mixture into the dry mixture and stir gently until just combined, avoiding overmixing.
  • Fold in the grated carrots, chopped apples, pineapple, and optional raisins or nuts carefully.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a healthier option, swap sugar with honey or maple syrup. You can also use whole wheat flour for added nutrition. Store in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.
