Preparation

  • Start by toasting two slices of your favorite bread until golden brown and crispy.
  • While the bread is toasting, cut the avocado in half and remove the pit. Scoop the flesh into a bowl and mash it with a fork. Add a pinch of salt and pepper to taste.
  • In a non-stick skillet, cook your eggs to your desired doneness. For a poached egg, bring water to a gentle simmer, add a splash of vinegar, and carefully slide in the egg. Cook for about 3-4 minutes until the whites are set but the yolk is still runny.

Assembly

  • Spread the mashed avocado generously over each slice of toast.
