  • ¼ cup soy sauce Low-sodium preferred.
  • 1 tablespoon cornstarch Used for thickening the sauce.
  • ½ cup beef broth Provides moisture and flavor.
  • 1 tablespoon vegetable oil For cooking the beef.

Preparation

  • Prep all ingredients: mince garlic and ginger, wash broccoli, and measure out ground beef.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add ground beef, breaking it apart as it cooks, and season with salt and pepper. Cook until browned.
  • Stir in minced garlic and ginger, cooking for another minute until fragrant.
  • Add broccoli florets, soy sauce, and beef broth, stirring well. Steam the broccoli for about 5 minutes until bright green and tender.
  • In a small bowl, mix cornstarch with a tablespoon of water until smooth. Pour it into the skillet, stirring to thicken the sauce for a few more minutes.
  • Serve hot over rice or noodles.

Notes

For added nutrition, feel free to add more vegetables like bell peppers or snap peas. Store leftovers in an airtight container in the fridge for up to 3 days.
