Ingredients
  

For the filling

  • 2 cups fresh spinach (chopped) Packed with nutrients.
  • 1 cup ricotta cheese For creaminess.
  • 1/2 cup grated Parmesan cheese Adds nuttiness.
  • 1 large egg (beaten) For binding and glazing.
  • to taste salt and pepper For seasoning.

For the pastry

  • 1 package frozen puff pastry (thawed) Will form the flaky crust.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, mix together chopped spinach, ricotta cheese, grated Parmesan, and season with salt and pepper.
  • Lightly flour your surface and roll out the thawed puff pastry sheets to about 1/8-inch thickness.
  • Cut out circles from the pastry using a round cutter or glass, aiming for about 3-4 inches in diameter.
  • Place a generous spoonful of the spinach filling in the center of each circle.
  • Fold the circles over to create half-moons, pressing the edges together or crimping with a fork.
  • Brush the tops with the beaten egg for a golden finish.

Baking

  • Arrange the bites on a baking sheet lined with parchment paper.
  • Bake for about 15-20 minutes, or until puffed and golden brown.
  • Let them cool slightly before serving.

Notes

For best results, ensure dough is completely thawed, squeeze excess moisture from spinach, and watch closely while baking to avoid burning. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 2 months.
