  • 4 large russet potatoes Choose firm, fresh potatoes for the best texture.
  • 1/4 cup olive oil Extra virgin olive oil is preferred for flavor.
  • 4 cloves garlic, minced Adjust garlic amount according to your taste.
  • 1 cup grated Parmesan cheese Use freshly grated Parmesan for the best flavor.
  • 1 teaspoon salt Use to taste for optimal flavor.
  • 1/2 teaspoon black pepper Adjust according to your taste.
  • 1 tablespoon fresh parsley, chopped For garnish.

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the russet potatoes if desired, then cut them into thin strips (about 1/4 inch thick).
  • Soak the potato strips in water for about 30 minutes to remove excess starch. Drain and pat them dry.
  • In a large bowl, toss the potato strips with olive oil until well coated. Sprinkle in the minced garlic, salt, and black pepper, and mix until evenly distributed.

Cooking

  • Spread the fries in a single layer on a baking sheet lined with parchment paper.
  • Bake the fries for about 20-25 minutes or until they’re golden and crispy. Halfway through, sprinkle the grated Parmesan cheese over the fries and return them to the oven for another 5 minutes.

Serving

  • Once done, remove from the oven, garnish with fresh parsley, and serve hot with your favorite dipping sauce.

Notes

For a kick, consider adding red pepper flakes to the seasoning mix. If you have leftovers, store them in an airtight container for up to 3 days, and reheat in the oven to maintain crispiness.
