  • 2 cups boneless, skinless chicken breasts (sliced thin)
  • 1 cup all-purpose flour Can substitute with gluten-free flour.
  • 2 large eggs (beaten)
  • 1 cup breadcrumbs (preferably seasoned) Can substitute with gluten-free breadcrumbs.
  • to taste salt and pepper
  • 1 teaspoon garlic powder (optional for added flavor)
  • as needed for frying vegetable oil

Preparation

  • Start by slicing your chicken breasts into thin cutlets. Try to keep them uniform in thickness to ensure even cooking.
  • Set up a breading station: Place flour in one shallow bowl, beaten eggs in another, and breadcrumbs mixed with salt, pepper, and garlic powder in a third bowl.
  • Dredge each cutlet first in the flour, shaking off the excess, then dip into the beaten eggs, and finally coat with breadcrumbs.
  • Heat about half an inch of vegetable oil in a large skillet over medium heat until it reaches 350°F (175°C).
  • Carefully place the breaded cutlets into the skillet without crowding them. Fry for 3-4 minutes on each side until golden brown and cooked through.
  • Transfer the cutlets to a plate lined with paper towels to absorb excess oil.
  • Serve the cutlets with your favorite dipping sauces or sides.

Notes

For a gluten-free option, swap all-purpose flour for gluten-free flour and use gluten-free breadcrumbs. Avoid overcrowding the frying pan to ensure crispiness.
