  • 1 can (14-15 oz) salmon, drained
  • 1 cup breadcrumbs (panko recommended)
  • 1/4 cup finely chopped onions
  • 1/4 cup finely chopped bell pepper
  • 1 clove garlic, minced
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried dill (or fresh if available)

  • 2 tablespoons Olive oil or vegetable oil for frying

Preparation

  • Start by draining the canned salmon and placing it in a large mixing bowl. Use a fork to break it up into smaller pieces.
  • To the bowl, add the breadcrumbs, chopped onion, bell pepper, minced garlic, egg, Dijon mustard, dill, salt, and pepper. Mix until all ingredients are well combined.
  • With your hands, shape the mixture into small patties—about 2-3 inches in diameter.
  • In a large skillet, heat the oil over medium heat. You want enough oil to coat the bottom of the pan.
  • Once the oil is hot, carefully add the patties to the skillet. Fry for about 4-5 minutes on each side until they are golden brown and crispy.
  • Place the cooked patties on a paper towel to drain excess oil.
  • Serve them warm, garnished with your favorite sauce or a sprinkle of fresh herbs.

Notes

For ingredient substitutions, canned tuna can be used instead of salmon, and gluten-free breadcrumbs can be utilized for a gluten-free option. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
