  • 1 lb shrimp (peeled and deveined)
  • 4 cups seafood stock (or vegetable stock) For a lighter version
  • 1 tablespoon olive oil
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1 bell pepper (diced)
  • 2 medium tomatoes (diced)
  • 1 teaspoon chili powder
  • ½ teaspoon cayenne pepper Adjust to taste
  • Salt and pepper to taste
  • 2 tablespoons fresh cilantro (chopped for garnish)
  • Lime wedges (for serving)

Preparation

  • In a large pot over medium heat, warm the olive oil. Once the oil shimmers, it’s ready for the next step.
  • Add the chopped onions and bell peppers. Sauté for about 5 minutes, until the onions turn translucent.
  • Stir in the minced garlic, chili powder, and cayenne pepper. Cook for one more minute, allowing the spices to release their flavors.
  • Pour in the seafood or vegetable stock, and add the diced tomatoes. Bring the mixture to a gentle boil.
  • Once boiling, add the shrimp. Cook for about 3-5 minutes, or until they turn pink and opaque. Make sure not to overcook them!
  • Taste the soup and adjust with salt and pepper as necessary.
  • Ladle the soup into bowls and garnish with fresh cilantro and a squeeze of lime.

Notes

Tips: If shrimp isn’t your thing, replace it with chicken or tofu. Adjust cayenne pepper based on your spice preference. Ensure not to overcook shrimp as they cook quickly.
