Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients

  • 1 cup Greek yogurt
  • 1 large egg
  • cup milk adjust more or less for desired batter consistency
  • 1 tablespoon honey or maple syrup optional, for sweetness
  • 1 teaspoon vanilla extract optional, for additional flavor

Preparation

  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, mix Greek yogurt, egg, milk, and honey or maple syrup until smooth.
  • Gradually fold the dry ingredients into the wet ingredients. Be careful not to overmix; a few lumps are perfectly fine for fluffy pancakes!
  • Preheat a non-stick skillet or griddle over medium heat. You can lightly grease the skillet if necessary.

Cooking

  • Pour about ¼ cup of batter onto the hot skillet for each pancake. Cook until bubbles appear on the surface (about 2-3 minutes), then flip and cook for another 1-2 minutes until golden brown.
  • Transfer pancakes to a plate and keep warm while you use the rest of the batter. Add your favorite toppings and dig in!

Notes

To ensure perfect pancakes, avoid overmixing the batter and adjust milk for desired thickness. Consider additional mix-ins like blueberries or chocolate chips.
