  • 2 medium sweet potatoes, peeled and diced
  • 1 medium onion, chopped
  • 1 piece red bell pepper, diced
  • 1 piece green bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley for garnish (optional) Can be omitted or substituted with other herbs.

Preparation

  • Begin by peeling and dicing the sweet potatoes, then chop the onion and bell peppers.
  • In a large skillet, heat the olive oil over medium heat. Once hot, add the diced sweet potatoes, and cook for about 5 minutes, stirring occasionally.
  • Toss in the chopped onion and bell peppers, along with the paprika, garlic powder, salt, and pepper. Stir everything together and allow it to cook for another 10–15 minutes until the sweet potatoes are tender and slightly crispy.
  • Once everything is cooked to your liking, taste and adjust seasoning if necessary. Garnish with fresh parsley, if using.
  • Transfer your delicious breakfast hash to plates and serve warm. Feel free to top it off with avocado or Greek yogurt.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be reheated in a skillet or microwave. For freezing, store in a freezer-safe container for up to a month after completely cooling.
