  • 3 cups cooked rice Preferably day-old for best results
  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, corn) Choose your favorite mix
  • 2 eggs lightly beaten
  • 3 tablespoons soy sauce Adjust to taste
  • 1 teaspoon sesame oil Optional
  • to taste salt and pepper
  • Green onions, sliced For garnish

Preparation

  • Prepare Your Ingredients: Make sure your rice is cooked and cooled. Leftover rice works best, as it will be less sticky. Chop your vegetables and set them aside.
  • Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Sauté Onions and Garlic: Add the chopped onion and sauté until it becomes translucent, about 2-3 minutes. Next, add the minced garlic and sauté for another minute.
  • Add the Mixed Vegetables: Toss in your mixed vegetables and stir-fry for about 2-3 minutes until they’re tender but still vibrant.
  • Scramble the Eggs: Push the mixture to the side of the pan and pour the beaten eggs into the cleared area. Stir until they’re fully cooked, then mix them into the vegetable mixture.
  • Add Rice and Sauces: Add the cooked rice, soy sauce, and sesame oil (if using) into the pan. Stir thoroughly.
  • Season to Taste: Finally, season with salt and pepper according to your taste preference.
  • Garnish and Serve: Finish with a sprinkle of sliced green onions. Serve hot and enjoy!

Notes

For optimal texture, use day-old rice. Avoid overcrowding the pan to allow ingredients to fry properly. Customize with your favorite proteins.
