  • 4 fillets cod fillets (approximately 6 ounces each)
  • 4 tablespoons unsalted butter, softened at room temperature
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • 1 tablespoon fresh lemon juice
  • 3 cloves garlic, minced

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a small bowl, combine the softened butter, parsley, dill, lemon juice, and minced garlic. Mix until well blended. Season with a pinch of salt and pepper.
  • Place the cod fillets on a lined baking sheet. Pat them dry with a paper towel to remove excess moisture.
  • Gently spread a tablespoon of the herb butter mixture onto each cod fillet, covering the top evenly.

Cooking

  • Place the baking sheet in the preheated oven and bake for about 12-15 minutes or until the fish flakes easily with a fork and appears opaque.

Serving

  • Remove the cod from the oven, squeeze fresh lemon juice over the top, and serve immediately with lemon wedges on the side.

Notes

If you don't have fresh herbs, dried herbs work just fine; use about a third of the quantity. Avoid overcooking the fish as it can dry out quickly. Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven at 350°F (175°C) for about 10 minutes.
