Ingredients
  

Burrito Filling

  • 4 large eggs For scrambling
  • 4 8-inch flour tortillas For wrapping
  • 1 cup bell peppers, diced Any colors preferred
  • 0.5 medium onion, finely chopped
  • 1 cup shredded cheese Cheddar or your favorite
  • to taste Salt and pepper
  • to taste Olive oil for cooking

Optional Toppings

  • to taste Hot sauce
  • to taste Salsa
  • to taste Avocado

Instructions
 

Preparation

  • In a pan over medium heat, drizzle some olive oil and sauté the diced bell peppers and onions until they are tender—about 5 minutes.
  • While the veggies are cooking, crack the eggs into a bowl, add a pinch of salt and pepper, and whisk them well. Pour the eggs over the sautéed veggies, gently stirring until they're fully cooked and set.

Assembly

  • Take a tortilla and place a portion of the egg and veggie mixture in the center. Sprinkle with your choice of cheese, then fold the sides over the filling and roll it up from the bottom to form a burrito.

Cooking

  • Place the rolled burrito seam-side down in the same pan. Cook for about 1-2 minutes per side until they are golden and crispy.

Serving

  • Slice in half if desired and top with your favorite toppings. Enjoy!

Notes

Don’t overcook the eggs for a fluffier texture. Warm tortillas before assembling for better wrapping. Make filling ahead of time for quicker preparation in the morning.
