  • 12 oz your favorite pasta (penne, farfalle, or rotini)
  • 1 lb halal smoked sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), diced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • optional Grated Parmesan cheese, for topping
  • for garnish Fresh parsley, chopped

Preparation

  • In a large pot, bring salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook for around 4-5 minutes until browned.
  • Toss in the chopped onion and minced garlic, stirring frequently for about 2 minutes until the onions become translucent. Next, add the bell pepper and cherry tomatoes, cooking until softened (approximately 3-4 minutes).
  • Stir in the cooked pasta and fresh spinach, mixing well to combine. Sprinkle Italian seasoning, salt, and pepper to taste. Let everything cook together for an additional 2 minutes until the spinach has wilted.
  • Remove from heat and serve hot, topped with grated Parmesan cheese and a sprinkle of fresh parsley for an extra touch.

Notes

For variations, use chicken sausage or vegetable sausage, and add seasonal vegetables like zucchini or mushrooms. Store leftovers in an airtight container for up to 3 days or freeze for up to a month.
