Ingredients
  

  • For the Pumpkin Filling:
  • 1 can 15 oz pumpkin puree
  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • For the Streusel Topping:
  • 1 cup old-fashioned rolled oats
  • ¾ cup all-purpose flour
  • ½ cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  • In a large bowl, whisk together the pumpkin puree, eggs, sugar, vanilla, cinnamon, nutmeg, and cloves until smooth.
  • In another bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Add the melted butter and mix until crumbly.
  • Pour the pumpkin mixture into the prepared pan and spread evenly. Top with the streusel mixture.
  • Bake for 35-40 minutes, until the filling is set and the streusel is golden brown.
  • Allow to cool completely before cutting into bars. Enjoy!
