Preparation

  • Start by measuring out your oats, pumpkin puree, nut butter, honey, pumpkin spice, vanilla extract, and salt.
  • In a mixing bowl, combine the pumpkin puree, nut butter, honey (or maple syrup), vanilla extract, and salt. Stir until fully combined and smooth.
  • Gradually fold in the rolled oats. Make sure everything is well-coated with the nut butter and pumpkin mixture.
  • Using your hands or a cookie scoop, shape the mixture into small cookies and place them onto a parchment-lined baking tray.
  • Place the tray in the refrigerator for about 30 minutes to allow the cookies to firm up.

Notes

You can swap out peanut butter for almond butter, sunflower seed butter, or any other nut butter of your choice. Store your cookies in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
