  • 2 cups whipped topping
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the pumpkin spice cake mix, water, vegetable oil, and eggs. Mix until smooth—about two minutes.
  • Pour the batter into a greased 9×13 inch pan. Bake according to the package instructions, usually around 25-30 minutes, or until a toothpick inserted comes out clean.

Cream Layer

  • While the cake cools, in a large mixing bowl, beat the softened cream cheese on medium speed until smooth.
  • Gradually add in the powdered sugar, mixing until fully combined.
  • Stir in the pumpkin puree, pumpkin pie spice, and vanilla extract into the cream cheese mixture.
  • Fold in the whipped topping gently until everything is well integrated.

Assembly

  • Once the cake is completely cooled, spread the cream layer over the top. Smooth it out evenly.

Chilling

  • Let it chill in the refrigerator for at least 2 hours before serving.
  • Before serving, sprinkle graham cracker crumbs over the top for that extra crunch.

Notes

You can customize this dessert by adding more pumpkin puree or using light whipped topping for a lighter version. Make it a day ahead for the best flavor!
