Preparation

  • In a medium bowl, combine the cottage cheese, pumpkin puree, eggs, and vanilla extract. Whisk until smooth and well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice, and salt.
  • Gradually fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Cooking

  • Preheat a non-stick skillet or griddle over medium heat. Melt a small amount of butter or oil.
  • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes on the other side. Repeat with the remaining batter.

Serving

  • Stack the pancakes high and top them with your desired toppings like maple syrup, fruit, or a sprinkle of powdered sugar.

Notes

Use room temperature ingredients for a smoother batter. Don’t overmix to keep the pancakes fluffy.
