  • 1.5 cups pumpkin puree Can be canned or freshly made
  • 1 cup heavy cream
  • 0.75 cups sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 1 pre-made pie crust (9-inch)

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, add the pumpkin puree, sugar, salt, and all the spices (cinnamon, nutmeg, and ginger). Whisk these ingredients together until well combined.
  • Add the eggs and mix until smooth. Pour in the heavy cream and vanilla extract, mixing until the filling is well blended.
  • Pour the pumpkin filling into the pre-made pie crust, smoothing the top with a spatula.

Baking

  • Bake in the preheated oven for 15 minutes.
  • Reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the filling is set and a knife inserted into the center comes out clean.

Cooling

  • Once baked, allow the pie to cool on a wire rack for about 2 hours before serving.

Notes

Top with whipped cream, candied pecans, or walnuts. Pair with spiced cider or coffee. Use quality ingredients for the best taste. Chill the crust for flakiness, and avoid overbaking.
