  • 6 cups Rice Krispie cereal
  • 10 oz marshmallows (or 4 cups of mini marshmallows)
  • 3 tablespoons unsalted butter Plus extra for greasing the pan
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1 teaspoon vanilla extract

  • candy corn, chocolate chips, or sprinkles For decoration and flavor

Preparation

  • Grease a 9x13 inch baking dish with butter or cooking spray to prevent sticking.
  • In a large saucepan, melt the butter over low heat. Once melted, add the marshmallows, stirring continuously until completely melted and smooth.
  • Remove the saucepan from heat and stir in the pumpkin puree, pumpkin spice, and vanilla extract until fully combined.
  • Gradually add the Rice Krispie cereal to the marshmallow mixture, stirring until all the cereal is evenly coated.
  • Pour the mixture into the prepared baking dish. Using a buttered spatula or your hands (with buttered fingers), press the mixture down firmly to create an even layer.
  • If desired, add candy corn or other toppings on top while the mixture is still warm, gently pressing them in.
  • Allow the treats to cool completely at room temperature, about 20-30 minutes. Once set, cut them into squares or fun pumpkin shapes.
  • Enjoy these treats fresh or store for a few days in an airtight container.

Notes

To ensure perfect treats, use fresh ingredients, control the heat while melting marshmallows, and feel free to experiment with additional spices like cinnamon or nutmeg.
