  • 1 pound store-bought gnocchi Choose the ones that are soft and ready to cook.
  • 1 cup pumpkin puree Make sure it's pure pumpkin for the best flavor, not pumpkin pie filling.
  • 1 cup heavy cream Adds a luscious creaminess.
  • 1 cup grated mozzarella cheese For melting on top.
  • 1 teaspoon garlic powder For added flavor.
  • Salt and pepper To taste.
  • Fresh herbs or breadcrumbs Optional for garnish.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring salted water to a boil and cook the gnocchi according to the package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
  • In a mixing bowl, combine the pumpkin puree, heavy cream, garlic powder, salt, and pepper. Stir until well-mixed and creamy.
  • Gently fold the cooked gnocchi into the pumpkin and cream mixture. Be careful not to mash the gnocchi.
  • Pour the gnocchi mixture into a greased baking dish. Top with grated mozzarella cheese, and sprinkle fresh herbs or breadcrumbs if desired.

Baking

  • Place the dish in the preheated oven and bake for 20-25 minutes or until the cheese is bubbly and golden.
  • Remove from the oven and let it cool for a few minutes. Serve warm and enjoy!

Notes

For added variation, incorporate sautéed kale, spinach, or mushrooms before baking. Different cheeses can also be mixed for a flavor twist. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to one month.
