Ingredients
  

For the Fritters

  • 1 cup pure pumpkin puree (canned or fresh)
  • 1 cup all-purpose flour Can substitute with whole wheat flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons sugar
  • 1 large egg
  • ½ cup milk
  • Oil for frying Oil for frying

Preparation

  • In a large bowl, mix together the pumpkin puree, flour, baking powder, cinnamon, nutmeg, salt, and sugar. Stir well until combined.
  • In a separate bowl, whisk the egg and milk together. Then gently fold this mixture into the pumpkin batter until just combined. Do not over-mix; a few lumps are fine!
  • In a deep frying pan, heat about 2 inches of oil over medium heat. You can check if the oil is hot enough by dropping a small bit of batter in; if it sizzles, you’re good to go.

Cooking

  • Using a tablespoon, drop scoops of the batter into the hot oil. Fry for 2-3 minutes on each side or until they are golden brown. Make sure to fry in batches to avoid overcrowding the pan.
  • Once cooked, remove fritters from the oil and let them drain on a paper towel. Serve warm with your favorite toppings!

Notes

These fritters can be enjoyed with maple syrup, honey, or a dollop of applesauce. For variations, consider adding chocolate chips or nuts to the batter.
