Preparation

  • In a mixing bowl, combine the pumpkin puree and softened cream cheese. Blend until smooth and creamy.
  • Gradually mix in the graham cracker crumbs, powdered sugar, pumpkin spice, and vanilla extract. Stir until fully combined.
  • Cover the mixture with plastic wrap and refrigerate for about 30 minutes.
  • After chilling, scoop out small portions of the mixture and roll them into balls (about 1-inch in diameter).
  • If desired, roll the truffles in crushed nuts, cocoa powder, or drizzle with melted chocolate.
  • Place the truffles in an airtight container and store them in the refrigerator until ready to enjoy.

Notes

Chill time is key for easier rolling. Feel free to adjust sweetness with powdered sugar and get creative with toppings.
