  • 1/4 cup maple syrup adjust based on sweetness preference
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)
  • 1 pinch salt

  • In a large mixing bowl, combine the pumpkin puree, almond milk, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt. Whisk until fully blended and smooth.
  • Gradually stir in the chia seeds, ensuring they are evenly dispersed throughout the mixture.
  • Allow the pudding to sit for about 10 minutes. This waiting time lets the chia seeds absorb the liquid and plump up.
  • Transfer the mixture into an airtight container or individual serving jars, and refrigerate for at least 4 hours, or overnight.
  • Once set, stir well again and then top with your favorite toppings such as nuts, fruits, or granola before serving!

Notes

Allowing the chia seeds to absorb the liquids will create that delightful pudding texture; overnight chilling is best! Feel free to experiment with different toppings or alternative milks.
